Step 1: If the noodles have stuck together, loosen them by placing them in a colander and running cool water over them.
Step 2: While they drain, prepare the sauce: In a large bowl, mix together the wasabi and water to form a paste. Mix in the miso and sake. Then add the sugar, vinegar, and mustard.
Step 3: Remove a scant 1/2 cup of the sauce and set aside.
Step 4: Mix the noodles in the bowl with the remaining sauce.
Step 5: Set aside for 10 to 15 minutes for the flavors to develop. (For a very mellow flavor, allow to sit, covered, for up to 1 day in the refrigerator.)
Step 6: Transfer to individual bowls and top with the scallions and the sesame seeds.
Step 7: Serve the rest of the sauce on the side.
