Step 1: In a small bowl, combine mayonnaise, green onion, garlic, saffron and lime juice. Cover and let stand at room temperature to allow flavors to blend, about 15 minutes.
Step 2: Grill lamb chops to your preferred doneness. I like mine rare!
Step 3: Serve chops with dollop of the saffron sauce.
