Step 1: Place all the ingredients in a crock-pot and cook on high for 6 hours.
Step 2: Remove the chicken pieces and allow cooling just enough to handle.
Step 3: Remove and discard the bones; chop the chicken and return to crock-pot.
Step 4: Cook for another hour, adjust seasoning, ladle into bowls and serve.
