Step 1: Preheat the oven to 375°. Season pork chops with seasoning salt and pepper using as much as you want; set aside.
Step 2: Prepare three shallow bowls (or cake pans).
Step 3: One bowl: mix together panko crumbs, Parmesan, parsley, and 1/2 teaspoon seasoning salt.
Step 4: Second bowl: add flour.
Step 5: Third bowl: add the eggs.
Step 6: Heat some olive oil in a skillet over medium high to high heat.
Step 7: Dredge pork chops first in the flour, then the egg, and lastly in the panko mixture, making sure to coat the meat evenly.
Step 8: Add pork chops to the skillet and allow to cook until golden brown and crispy on each side, about 2 minutes per side.
Step 9: Transfer the chops to baking sheet that's been lightly sprayed with non-stick cooking spray.
Step 10: Bake pork chops uncovered, until they reach the internal temperature of 140°, approximately 20-22 minutes (NOTE: the temperature of the baked chops will rise about 5 degrees when removed from the oven, they say 145 is best, I pull mine out at 140°, you can cook then for how long your want).
