Step 1: Place the oil in a large skillet.
Step 2: Add spinach and over medium heat, stir until spinach is wilted.
Step 3: Cool the spinach.
Step 4: Preheat oven to 375f.
Step 5: Squeeze all the water from the spinach. Finely chop the spinach.
Step 6: Add the feta, pine nuts, garlic, mint, salt, pepper and lemon juice to the spinach; mix well.
Step 7: Rinse the fish and dry it inside & out. Stuff it. Place in non stick foil in an oven proof pan. Place lemon slices on top.
Step 8: Seal the foil.
Step 9: Bake for 45 minutes or until the fish flakes easily.
