Step 1: Peel and devein prawns (leave tail bit on if you wish), to devein slit along the back but not all the way through and remove the poo track and slightly flatten out the prawn.
Step 2: Put the flour in a shall bowl and season with salt and pepper if you wish and the mix egg and milk together in another shallow bowl and put the breadcrumbs and dill into another bowl.
Step 3: Dip the prawns into the flour and then into the egg mix and then into the crumbs making sure the prawn gets well coated (at this point if you wish you could double crumb but if doing this you will need more crumb mix by dipping back in the egg and then in the crumb mix again), continue till all prawns are crumbed.
Step 4: Preheat your deep fryer to 170C degrees and lower a couple of prawns at a time into the oil and depending on the size of your fryer will depend on how many you can do at a time (we can do six in ours) and fry for a minute till golden brown and then remove with a slotted spoon and place on paper towel before serving with desired sauce.
