Step 1: Beat the eggs until frothy, about 4-5 minutes (this is important so make certain to beat for that time). Stir in the butter and vanilla.
Step 2: Add the dry ingredients with the pecans and mix well.
Step 3: Put liners into muffin tray. Scoop the batter into muffin liners.
Step 4: Bake at 350 degrees for 20 minutes.
Step 5: Note: These muffins do not rise. They will remain the same size that you fill.
