Step 1: In a large bowl, combine the tomatoes, onions, celery and green pepper.
Step 2: In a small bowl, whisk the wine or apple juice, vinegar, oil, mustard seed, salt, coriander and pepper; pour over vegetables and toss to coat.
Step 3: Refrigerate at least 1 hour.
Step 4: Serve with tortilla chips.
Step 5: Refrigerate leftovers.
