Step 1: Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
Step 2: Heat some oil in a skillet. Season chicken pieces with salt and pepper then brown in oil on both sides. Arrange chicken pieces in baking dish.
Step 3: In a large bowl, mix together mayonnaise, cheddar cheese soup, mushrooms, wine, garlic, parsley, curry powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper; pour mixture over chicken. Sprinkle the top lightly with paprika.
Step 4: Bake 1 to 1-1/4 hours, until done.
