Ingredients
- 5 cups potatoes, cubed 1 inch
- 2 cups water, just to cover
- 2 tablespoons butter
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1-2 tablespoons fresh parsley, chopped (optional)
