Ingredients
- 1 1/2 cups cooked pork, chopped (cold)
- 2 green apples, peeled,cored & chopped
- 8 small potatoes (new potato, cooked,cooled & chopped)
- 1 small beet, cooked & chopped
- 1 large egg (hard-boiled, finely chopped)
- 1 gherkin pickle (chopped)
- 1 small yellow onion (or scallion, chopped fine)
- 3 tablespoons oil
- 3 tablespoons vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 to 6 lettuce leaves (depending on leaf size)
- 1/2 cup mayonnaise
- GARNISHES
- 1 small tomato, peeled & sliced
- 1 large egg (hard-boiled egg, thinly sliced)
- 1 gherkin pickle (sliced)
How to Make

Step 1: In a bowl, combine chopped pork, apples, potatoes, beets, egg, gherkin & onion.

Step 2: Mix together the oil, vinegar, salt and pepper to make dressing.

Step 3: Pour dressing over salad and toss to coat well.

Step 4: Line a flat serving dish with several lettuce leaves.

Step 5: Arrange the salad in a"boat" shape in lettuce.

Step 6: Cover the boat with a very thin layer of mayonnaise.

Step 7: Top with garnishes
