Ingredients
- 2 cups cooked couscous
- 100 grams feta cheese (broken in 2cm squares)
- 100 grams roasted red capsicums (chopped thin)
- 1/4 cup kalamata olive (pips removed and chopped)
- 100 grams sun-dried tomatoes, chopped (marinated, semi-dried)
- 1/4 cup fresh basil, chopped
- 1 cup baby spinach (leave spinach whole)
- DRESSING INGREDIENTS
- 1 cup yogurt (natural yoghurt)
- 1 crushed garlic clove
