Step 1: Combine brown sugar, flour, salt, egg, pineapple and cider vinegar in a small saucepan. Heat over medium high heat until thickened, stirring occasionally. Remove from stove and cool in fridge.
Step 2: Combine sauce with Cool Whip in a large bowl. Core apples and chop into bite size pieces, smaller is better.
Step 3: Mix apples and peanuts into sauce. Serve chilled.
