Step 1: Chop bacon, slice mushrooms and shred cabbage.
Step 2: Slice spring onion (scallion) if using. Set aside.
Step 3: Heat butter on medium heat in a large fry pan (skillet).
Step 4: Add bacon and mushrooms and cook for 1 minute.
Step 5: Add the cabbage and cook for a further 4 or 5 minutes until wilted.
Step 6: Stir in spring onion, if using, and season with black pepper.
