Step 1: Puree chipotle peppers with adobo sauce until smooth. Combine with remaining ingredients and pour over pork in large crock pot.
Step 2: Start crock pot at high for 10 minutes, then turn to low and cook at least 12 hours.
Step 3: Once pork is falling apart, remove from cooker and wrap in foil. Set aside.
Step 4: Remove fat layer from liquid with a gravy separator or turkey baster. Transfer sauce to a saucepan and simmer on med-low heat until it thickens. Adjust seasoning to taste.
Step 5: Pull pork apart with 2 forks, removing excess fat and bones, if any.
Step 6: Put meat back in crock pot on warm and stir in sauce.
Step 7: Serve on a warm roll or bun with cole slaw.
