Step 1: Sort through beans, looking for small rocks or debris. Rinse beans and place in pot.
Step 2: Cover up to 2 inches over the beans and let sit overnight. (Quick method, bring to a boil, remove from heat for an hour, then proceed. But they won't taste as good.)
Step 3: At this point, I drain the beans and add fresh water, but my mom never did. Add water to about 1 - 1 1/2 inches over beans this time.
Step 4: Add bacon grease and garlic, cover and bring to a boil. Turn down to simmer and cook 3-4 hours, until beans are soft but not falling apart.
Step 5: Add remaining ingredients, bring to a boil, then turn down and simmer 1 more hour.
Step 6: If beans are too soupy, you can simmer them without the lid. Or just wait until tomorrow, the leftovers won't be as soupy.
