Step 1: Beat egg whites.
Step 2: In another mixing bowl, combine pudding mix, flour, salt and baking powder; add buttermilk and egg yolks. you may need little more milk Fold in whites.
Step 3: Bake on hot waffle iron sprayed heavily with Pam. use only 1/2 cup batter rises great and overflows
Step 4: Heat the jam apricots and lemon juice in microwave until just warm. Dump in middle of whipped cream in bowl, stirring just a little.
Step 5: Top waffles from bowl.
