Step 1: Soak beans overnight.
Step 2: Pour off water in the morning and add more water to cover, boil beans with baking soda for 3-5 minutes. Rinse well with hot water.
Step 3: Place beans in a large casserole dish.
Step 4: Add the rest of the ingredients, sprinkling them over the beans. Add enough water to cover. Do not stir.
Step 5: Cover tightly with a lid and bake for 6-7 hours at 325°. You may need to add more water during the baking, but you don't want it soupy, you just want to make sure there is moisture in the beans.
Step 6: The secret to this recipe is DO NOT STIR! I don't know why it works, but it does. Just bake and make sure there is liquid in the casserole dish while its baking.
