Step 1: In oil, cook chicken and shallot. Add garlic. Remove to plate.
Step 2: Add flour to oil; brown. Add cream and stir.
Step 3: Add seasonings, simmer until thickened.
Step 4: Add chicken mixture. Add cheeses, take off heat.
Step 5: Add parsley, spinach and penne.
Step 6: Plate.
