Step 1: Marinade ... Add all the ingredients to a small bowl or measuring cup and mix to combine. Now, I love a ziploc bag to marinate - no clean up. But, you can also use a glass bowl too. Add the marinade and chicken to a ziploc bag, close, and shake - that simple. If using a bowl, make sure to mix the chicken so it is coated well; then, cover with plastic wrap. Marinate at least 4 hours, up to all day.
Step 2: Chicken ... Remove the chicken from the marinade; and, let it come to room temperature on the counter. Pat the chicken dry using a paper towel; then, season with salt and pepper.
Step 3: Grill ... Make sure to oil your grill well - whether you use a indoor or outdoor grill. Cook/grill the chicken on each side, until you get a nice char. Depending on the size of the thighs and drumsticks, your cooking time can vary from 12-20 minutes.
Step 4: Garnish ... Add the papaya, scallions, lime juice, olive oil, and a pinch of both salt and pepper to a small bowl and toss to combine.
Step 5: Serve, Plate, and ENJOY! ... Once the chicken is done; transfer to a serving platter; and, garnish with the fruit. It's a great dinner to grill!
