Step 1: Combine all ingredients as listed in a small jar with a tight fitting lid (baby food jars work good). Shake mixture to combine. Stores for months if kept in refrigerator. Keep out of direct sunlight, heat and humidity.
Step 2: TO USE: mix 1 tablespoon of the spice mix with 1 cup all-purpose flour, 2 tablespoons packed light brown sugar and 1 teaspoon salt. Place in a doubled plastic food bag and add chicken to coat. Fry, drain on paper towels, serve!
