Step 1: Hard Boiled Eggs ... Use your favorite method to make your eggs. Personally - I like to add the eggs to a pot of COLD water, then bring to a boil. Once it comes to a boil, cook 1 minute; then, turn off the heat and cover. Let it set 12 minutes. Rinse the eggs in cold water and peel. Chop the eggs, and set to the side. These can easily be boiled ahead of time.
Step 2: Salad ... Add the scallions, onion, celery, (start with 1/2 cup) capers (start with 2 1/2 teaspoons), olives, relish (start with 1 1/2 tablespoons), mayonnaise (start out with 1 1/2 tablespoons), yogurt, parsley, a pinch of both salt and pepper, to a bowl; and mix to combine. I always start out with a smaller amount ... because, you can always add more - but, you can't take it away.
Step 3: Then, add in the tuna, eggs and mix to combine. At this point you can add more capers, olives, relish, mayo or celery, etc. - it really depends how you want to make it your own. Everyone seems to like it a bit different. Also, after everything is mixed; re-season with salt and pepper. Basically, you can customize this salad to your tastes.
Step 4: Sandwich ... Now, I like my bread toasted, with a bit of crispy iceberg lettuce; but, my girl friend prefers, untoasted with tomato and soft Bibb or Boston lettuce. So, however you decide to make it. Build your sandwiches. As mentioned, 3-4 sandwiches; depending on how much of the filling you use. I tend to use a thinner sliced bread, and not too much of the filling. This is also fantastic served as a dip with crackers, if you don't want to make a sandwich. And, try cucumber slices, stuff celery or tomatoes as well. It makes great sandwiches - but, so much more.
Step 5: Serve and ENJOY! ... Chips are the perfect side for me. Keep it simple.
