Step 1: Sauce ... Add the pesto, roasted red peppers, and tomato sauce to a small food processor; and, pulse until smooth. Let it rest 30 minutes to a hour before using, to develop all the flavors.
Step 2: Pizza Crust ... Now, the pizza crust will depend how you cook your pizza. Whether you are using a pre-made crust; store bought (canned or frozen), or making your own. You want to use what method you would normally use; or, follow package directions. You can cook directly on the grates (if grilling); on a sheet pan or pizza stone, in the oven.
Step 3: I normally roll my crust out on a little flour/corn meal mix, top with all of my ingredients; and, transfer to my pizza peel. Then, into the oven on my preheated pizza stone - dusted with a little corn meal. Grilling pizza is a different method, all together. Then, you can always use a premade crust as well. So, you really need to pick a method you have made before. This recipe is all about the toppings.
Step 4: Toppings ... After the dough has been rolled out; brush your pizza with a little olive oil; and go lightly. Next, the sauce; again - DO NOT over sauce; and keep it about 1/2 from the edge. Add the mozzarella slices, tomato slices, and parmesan cheese. Now, I love anchovies, I understand that many dont; but, I love to add some minced anchovies to mine. Again - this is OPTIONAL.
Step 5: Bake ... About 10-15 minutes on 425 degrees until golden brown and bubbly. Remember, this can be baked on a sheet pan, pizza stone, grill, etc; so, cooking times can really vary. You should pick a method you are comfortable with; and, have made before. I have friends who swear by a 500 degree oven; and, others who use a 400 degree oven on a baking sheet. Yet, they all seem to come out just fine. Again; follow package directions or pizza directions you are used to.
Step 6: Finish and Serve ... Once the pizza is golden brown and bubbly; remove from the oven; and, finish with plenty of torn basil. Dig in and ENJOY! A cold beer or glass of wine, and salad - dinner is served. ENJOY!
Step 7: Note ... With this pizza, I think more is less - don't over sauce, or add too much cheese. All the good ingredients will stand their own.
