Step 1: Marinade ... Add the orange marmalade, gin, sriracha, and garlic to a small bowl or measuring cup; and, mix to combine. Make sure to grate the garlic over the bowl or cup, so you get all the juice. Then; add the marinate to a larger bowl or ziploc bag. I love the bag - no dishes. Add the shrimp, seal with plastic wrap; or close up the bag. Make sure all the shrimp are well coated. Marinate 1-2 hrs; but, no longer.
Step 2: Skewer ... I like to add onions to my skewers; but, that is up to you. I cut the onion in quarters and separate the pieces. You don't want anything too thick; as, the shrimp is so quick cooking. Alternate shrimp and onions; but, make sure to not over crowd the skewers. Season the shrimp with a bit of salt and pepper.
Step 3: Grill ... You can always grill these on a indoor grill pan; but, I prefer an outdoor grill. And remember, if using wooden skewers, make sure to soak them at least 15 minutes, so they do not burn. When I first put the skewers on the grill; I do brush some of the marinade over the skewers. Grill a 2-4 minutes on each side until golden brown and charred. I usually have the grill on HIGH heat. The size of the shrimp and the heat of the grill, will determine how long they take. Once the shrimp turn pink, and begin to curl. They are done!
Step 4: Serve and ENJOY! ... Plate and garnish with scallions if you want. Rice or a citrus salad is a perfect side dish.
