Ingredients
- 1 1/2 cup beans (butter beans or big limas, just cooked)
- 1 1/2 cup frozen corn
- 1 cup carrots, diced (cooked)
- 1/2 cup black olives, sliced
- 1 tomato, diced
- 1/2 cup red onion, diced
- 1/2 cup feta cheese, crumbled
- 1 tablespoon red chili flakes
- 1 tablespoon fresh parsley, minced
- 1 tablespoon fresh cilantro, minced
- 2 tablespoons oil
- 1 tablespoon red vine vinegar
