Step 1: In oil, cook onion and garlic. Add sausage.
Step 2: Add rice, cook until puffy white.
Step 3: Add water and beans, salt and pepper; cover, simmer 15 minutes until almost all water is absorbed.
Step 4: Add cheese and cilantro, take off heat, cover let set 5 more minutes.
