Step 1: Sprinkle lemon juice on peels.
Step 2: Dry the peels in a dehydrator or warm oven (150°F) on parchment paper with oven door ajar.
Step 3: They are ready when they are brittle and lightly browned.
Step 4: Crumble peelings and store in airtight container.
