Okroshka (Cold Meat and Vegetable Soup)

Ingredients
- 4 large eggs (hard-boiled)
- 1 cup sour cream
- 2 teaspoons Dijon mustard
- 1 tablespoon salt, or to taste
- 1 teaspoon granulated sugar
- 6 cups beer (flat beer)
- 1/4 cup thinly sliced scallions (white and green)
- 1 medium cucumber, peeled and diced
- 1/2 cup cooked beef, diced (ham or veal may be substituted)
- 3 tablespoons finely chopped parsley
How to Make

Step 1: Press eggs through a sieve, or chop finely.

Step 2: Add sour cream, mustard, salt and sugar, and beat well.

Step 3: Slowly mix in beer.

Step 4: Stir in scallions, cucumber and meat.

Step 5: Chill.

Step 6: Sprinkle with parsley before serving.
