Step 1: Combine potatoes with 1 tablespoon salt and 1 cup vinegar.
Step 2: Cover with water to 1" above potatoes.
Step 3: Bring to boil, cook until soft about 20 minutes. Drain and pat dry.
Step 4: Heat butter in a large skillet or wok medium high heat.
Step 5: Add potatoes. Season with sea salt and pepper. Cook stirring until they are golden brown & crisp about 8-10 minutes.
Step 6: Drizzle with remaining vinegar ans sea salt, top with chives.
