Step 1: Place onion in food processor, pulse til smooth.
Step 2: Add vinegar, honey, mustard and puree til smooth.
Step 3: Add the oil in a slow steady stream til mixture is thick and emulsified.
Step 4: Taste and adjust for seasoning with salt, pepper and sugar.
Step 5: Store airtight in fridge up to 3 days.
