Step 1: Sieve one third of the flour into a mixing bowl, rub in the fresh yeast. Add the sugar and water and mix to a smooth batter.
Step 2: Cover with a damp cloth and leave to ferment for 15 minutes.
Step 3: In a separate bowl mix the remaining flour and salt and rub in the butter till you have fine breadcrumbs.
Step 4: Add the batter mixture and combine to form a soft dough and knead well for 10 minutes. Cover with a damp cloth and leave to prove for an hour.
Step 5: Knead again for a minute before sectioning the dough into eight equal portions. Roll each piece into a flat round shape.
Step 6: Place on a greased baking tray, cover with a dry cloth and prove until doubled, about 40-50 minutes.
Step 7: Brush gently with beaten egg and sprinkle sesame seeds over the top of the buns. Bake in a hot oven. 220C/gas mark 7 for 10 minutes, or until well risen; the buns should sound hollow when tapped underneath. Allow to cool on a rack.
