Step 1: Pound pork chops until 1/4 inch thick; set aside.
Step 2: In a small bowl beat together eggs, water, pepper and Italian seasoning.
Step 3: In a medium bowl combine Parmesan cheese,and cracker crumbs.
Step 4: Dip pork chops in egg mixture, coating both sides.
Step 5: Then coat both sides of pork in cracker crumb mixture.
Step 6: In a medium size skillet, heat oil until hot but not smoking.
Step 7: Add pork chops and cook until golden brown, about 6 minutes on each side.
Step 8: To assemble each sandwich,Place a chop on bottom half of each bun,then spread 2 Tablespoon of sauce over meat.
Step 9: Sprinkle with 2 Tablespoons of mozzarella.
Step 10: Cover with top half of bun and enjoy.
