Step 1: In large skillet over medium heat add oil.
Step 2: Heat oil until hot but not smoking.
Step 3: Add smoked sausage and if using onion add here; cook until lightly browned, about 5 minutes.
Step 4: Add carrots,cabbage,and water.
Step 5: Cover with lid; simmer for 25 or until cabbage is tender and water is absorbed(You might need a little more water to get cabbage fully cooked).
Step 6: Salt and pepper to taste,then serve.
