Step 1: Melt 1 tablespoon butter in a skillet over medium-high heat.
Step 2: Add the onion, ginger and dried thyme and cook until onion is softened and translucent.
Step 3: Meanwhile coat a casserole dish with non-stick spray and add the grated sweet potato and apples.
Step 4: Add the onion mixture to the casserole dish and season with salt and pepper to taste.
Step 5: Season both sides of the pork chops with salt and pepper to taste.
Step 6: Melt the other tablespoon of butter in the skillet and brown the pork chops on both sides until they have a nice “crust”.
Step 7: Place the pork chops on top of the sweet potatoes, apples and onion mixture.
Step 8: Add the wine to the skillet and simmer while scraping up the bits until reduced by about half.
Step 9: Pour the wine over the pork chops and vegetables, cover and bake in a pre-heated 350 degree oven for 35 minutes or until sweet potatoes are soft.
Step 10: Uncover and cook for another 10 minutes.
