Step 1: Heat oil in a large skillet.
Step 2: In a small cup or bowl whisk the soy sauce with corn starch until smooth; set aside.
Step 3: Add chicken cubes and cook until lightly browned. Remove chicken to a plate.
Step 4: Add remaining ingredients (including the soy sauce mixture, mix again before adding). Heat stirring constantly over medium heat until blended. Add in Sriracha sauce.
Step 5: Add in the cooked chicken and bring to a boil. Reduce heat and simmer for 17-20 minutes uncovered until sauce it thickened (stirring occasionally).
Step 6: Serve over cooked rice. and garnish with green onions.
