Step 1: In a saucepan (use a 6-quart or larger if making the complete pasta sauce recipe) heat a small amount of oil. Add in sausage meat; cook stirring constantly over medium-high heat until browned. Remove to a bowl; set aside.
Step 2: Add in enough oil to coat the bottom of your pot. Heat oil, then add in onions, oregano and basil; cook stirring over medium heat for about 5 minutes or until softened. Add in garlic and bay leaves; cook 3 minutes stirring constantly.
Step 3: Add in tomato paste; cook stirring 2 minutes.
Step 4: Add in the cooked sausage meat and the wine, salt, pepper flakes and pepper; bring to a light simmer, then simmer over low heat for 10-15 minutes, stirring frequently.
Step 5: Use right away for a large pot of sauce or divide and freeze for smaller amount of sauce.
Step 6: When ready to use just defrost in the microwave or thaw in the fridge.
