Step 1: Melt the butter in a large saucepan
Step 2: Add parsnips
Step 3: Cook for 5 minutes
Step 4: Add curry powder and honey - cook 2 minutes
Step 5: If you are not going to mash the parsnips just continue cooking them covered for about 4 minutes, flipping them a couple of times.
Step 6: If you want mashed add milk, bring to boil.
Step 7: Cover and simmer for a further 15 minutes or until the parsnips are very tender and most of the milk has thickened
Step 8: Mash, season with salt & pepper
Step 9: Serve
