Step 1: Sauce ... Add the cream to a small pot and bring to a medium heat, just under a boil. Then, reduce to low, add the cheese and basil, and mix to combine. Season with salt (go easy on the salt, as the cheese is salty), and pepper, and simmer for 5-7 minutes. It will naturally thicken and reduce; make sure to stir it often.
Step 2: Pasta ... As the sauce is simmering, cook the pasta according to package directions. Make sure to cook your pasta in plenty of salted water. Once the pasta is done; drain, and return to the pot.
Step 3: Finish and Serve ... Add the sauce to the pasta along with the fresh parsley and toss. Season again with salt and pepper if necessary. ENJOY!
Step 4: Again, the last minute, you can toss in peas, blanched broccoli florets, sauteed mushrooms, asparagus; cooked chicken or ham, etc. Also, mix up the herbs, or add a bit of white wine - have fun with it. But, this is all about the sauce ... It makes a very nice sauce to dress your favorite pasta. And, it is quick and easy.
