Step 1: In a medium bowl or brown paper bag, combine the 1/2 cup sugar and 1 tsp. ground cinnamon; set aside.
Step 2: Fill your deep fryer with oil to about 2 1/2 inches deep. Heat to 375°F.
Step 3: In a small saucepan over medium heat, combine the water, 2 1/2 tbsp. sugar, salt and 2 tbsp. vegetable oil. Bring the mixture to a boil and then remove from the heat.
Step 4: Stir in the flour until the mixture forms a ball.
Step 5: When the dough is cool enough to handle, roll into balls about the size of walnuts.
Step 6: Fry 3-4 dough balls at a time until golden brown. Remove from the oil and immediately shake or toss the churro bites in the reserved cinnamon-sugar mixture. Remove to a plate while you repeat the process with the remaining dough. Hands off till you're through!
