Step 1: Note: 'Accent' seasoning, it is available at most grocery stores; and, there really is no substitute. It does contain MSG, which some are sensitive to. Basic kosher salt works just as well for me; however, some swear that you can't replace Accent. It is up to you whether you want to use it or not.
Step 2: Bacon ... Saute (or render) your bacon, on medium to medium low heat, until the bacon is crisp. If you saute the bacon slowly, it is not necessary to use oil. Just take your time. Once the bacon is crisp; transfer to a plate lined with a paper towel to drain and cool.
Step 3: Cheese ... Add the softened cheese, scallions, garlic (and grate the garlic over the bowl, so you get all the juice), vinegar, Accent or salt (go easy with the salt, you can always add more); and finally the bacon. Mix to combine all the ingredients. Taste for seasoning, and adjust if necessary. I don't add pepper, but, you can if you want.
Step 4: Ball ... Add the cheese mixture to a piece of plastic wrap - fold up and twist to create a ball. Refrigerate at least 4 hours to let the flavors 'mary.' Usually after a couple of hours, I take it out and roll it around (in the wrap), to get a nice round shape; then, return to the refrigerator, so it can firm up. Also, I sometimes make 2 balls vs one. It just depends how you like to serve it. You could also make a log if you prefer that.
Step 5: Serve and ENJOY! ... Crackers or vegetables are great to serve with this. It is also good on thin toasted crostini. Great Party Food - perfect for potlucks, game night, entertaining, etc. Easy ... and great to make ahead too.
