Step 1: Rinse the rice by filling a bowl with cold water, swirling and draining- do this 7 or more times-until the water is clear. Place the rice in cold water and let soak for 30 minutes.
Step 2: In the meantime, place the milk in a pot and over medium heat, bring to a boil, stirring often- drain the rice well and add to the pot.
Step 3: Bring to a boil again and cook for approx 20 minutes, stirring very often.
Step 4: Add the sugar,pinch salt, raisins and cardamon. Let cook for another 10 minutes , stirring often, or until the rice is cooked through.
Step 5: Place into a heat-proof bowl(pyrex) and let cool.
Step 6: Chill- serve with pistachios on top.
