Step 1: Add some oil to coat bottom of a skillet, then heat over medium heat.
Step 2: In a bowl, combine all dry ingredients (first five).
Step 3: In a small bowl whisk egg, then whisk in melted butter, vanilla and milk (make sure these are well combined; add to flour mixture and mix until just combined (mixture should have a few lumps, do not overmix).
Step 4: Pour 1 teaspoon or more of oil in a 1/4-cup measuring utensil then spread it over sides and bottom. Scoop out a scant 1/4-cup of the pancake mixture and pour in the skillet.
Step 5: Cook one side, then flip pancake when the batter starts to bubble, but before the underside to too brown.
Step 6: Serve pancakes topped with some butter (really that`s all you will need because these babies taste so good on their own!).
