Step 1: Lightly season chicken with salt and pepper, and place into your crock pot.
Step 2: In a medium bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour mixture over chicken. Cook on low for 4 hours.
Step 3: Remove chicken from crock pot into a bowl and cover foil to keep warm.
Step 4: Pour reserved sauce in a small saucepan and add cornstarch slurry. Stir to combine with sauce. Cook sauce on medium-high until it thickens slightly.
Step 5: Lightly toast sesame seeds in dry skillet just till you can smell them.
Step 6: Serve chicken over cooked rice and spoon some sauce on top. Sprinkle with sesame seeds and chopped scallions.
