Step 1: Remove roll of cookie dough from refrigerator and let come to room temperature. Chop up dried cherries and knead into softened cookie dough to distribute well.
Step 2: Form back into a roll with plastic wrap and twist ends to seal. Return to refrigerator for about 1 to 1 1/2 hours to re-chill.
Step 3: Preheat oven to 350 degrees F. Remove cookie roll from refrigerator and cut into 12 equal slices. Place 2 inches apart on ungreased cookie sheet. Bake for 9-12 minutes. Let cool for about 5 minutes on baking sheet. Then place on cooling rack to cool completely.
Step 4: In a double boiler over simmering water (not boiling), pour white chocolate chips in top pan and stir just until melted. Do not allow to get too hot or it will separate. With a spoon, pour some melted chocolate on each cookie and spread around with the spoon. Let chocolate harden. Or while the chocolate is still somewhat soft, put some sprinkles on top.
Step 5: *Tip: make several of these rolls ahead and keep in the refrigerator so that they're ready to bake for unexpected holiday guests. And keep a couple extra bags of white chocolate chips in your pantry.
