Step 1: Combine all ingredients except parsley into slow cooker.
Step 2: Cook on high for 3 1/2 hours.
Step 3: Remove bay leaves and chicken.
Step 4: Discard bay leaves. Shred chicken (if not already shredded from cooking), and return to crock pot.
Step 5: Cook for remaining 30 minutes.
Step 6: Top with parsley before serving.
