Step 1: Cut the cauliflower into florets, and boil for 6-7 minutes, until fork tender.
Step 2: Strain the cauliflower well, and blend it in a food processor or blender until it reaches your desired consistency.
Step 3: Add in the cheese, salt, and pepper and process until mixed.
Step 4: Top with chives, if desired.
Step 5: Serve.
