Step 1: Butter the jelly roll pans and set to the side to have them ready.
Step 2: Stir sugar, syrup and cold water in a pan over medium high heat, with the candy thermometer in the pan.
Step 3: Heat to 250 degrees, add food coloring. Stir well.
Step 4: Keep heating, at 300 degrees add anise oil and stir well.
Step 5: Carefully pour candy when it reaches 300 degrees into the jelly roll pans. You can use a stainless steel ladle to help you do this process. Do not attempt to move the pans after the hot candy has been poured into them. Let the candy cool. Break with a hammer wrapped in a kitchen towel. Enjoy!
