Step 1: Heat your oil in a large skillet or wok. medium heat
Step 2: Add ginger and garlic
Step 3: Saute for 2 minutes or until the garlic is lightly browned, and aromatic
Step 4: Add Bok Choy, noodles and soy sauce
Step 5: Toss the Bok Choy and noodles for about 3 minutes or until it is just heated through and still crisp
Step 6: Season with salt & pepper
