Step 1: Set up grinder attachment on stand mixer (Kitchenaid) or use a table top grinder, with medium blade. (If using old fashioned table top type grinder, make sure to have a drip pan, as this gets quite juicy.)
Step 2: Run fruit through the grinder. Use the entire (seedless) orange, peels, pith and all.
Step 3: Stir in ginger and part of the sugar (I start with 1 cup-then add more to taste-we like it tart).
Step 4: Let sit at room temperature until sugar dissolves, about 45 minutes.
Step 5: Store in the refrigerator.
