Step 1: Preheat oven to 375 degrees.
Step 2: Place sweet potatoes in the microwave. Cook on HIGH until fork-tender (but not to soft). Transfer to bowl. Mix in light cream (or milk) butter, brown sugar and nutmeg; mash until smooth.
Step 3: Season with salt and pepper.
Step 4: Transfer mixture to a 2-quart baking dish. Top with the marshmallows (now if you want, cover with plastic wrap then place the pan in the fridge and leave it there until you bake it).
Step 5: Bake 15-20 minutes or until center is warmed through and marshmallows are lightly browned.
